Instructions
- Preheat your oven to 400°F and lightly coat a baking sheet with olive oil or non-stick spray.
- Grate the zucchini using a box grater, then wrap it in a clean towel to remove excess moisture.
- Grate the garlic until fine.
- In a mixing bowl, combine the drained zucchini, grated garlic, egg, breadcrumbs, cheese, chives, parsley, basil, salt, and pepper; mix well.
- Form tablespoon-sized balls from the mixture and place them on the prepared baking sheet.
- Bake for 15-18 minutes until golden brown and serve warm with marinara sauce.
