  • 1 ½ cups unsalted butter (for frosting)
  • Powdered sugar
  • Watermelon Kool-Aid mix
  • Mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line cupcake pan with liners.
  2. In a bowl, cream together butter and sugar until fluffy. Add egg whites, sour cream, milk, and vanilla; mix until combined.
  3. In another bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to wet mixture along with green food coloring.
  4. Fill liners two-thirds full with batter and bake for 15 minutes or until a toothpick comes out clean.
  5. For the frosting: Beat butter until creamy; gradually add powdered sugar, then watermelon Kool-Aid mix and red food coloring until desired hue is achieved.
  6. Frost cooled cupcakes generously and sprinkle mini chocolate chips on top.
