- 1/2 cup unsalted butter
- 3/4 cup granulated sugar

- ½ cup sour cream

- 1 tsp vanilla extract
- 1 ¼ cup all-purpose flour

- Leaf green food coloring
- 1 ½ cups unsalted butter (for frosting)
- Powdered sugar
- Watermelon Kool-Aid mix
- Mini chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line cupcake pan with liners.
- In a bowl, cream together butter and sugar until fluffy. Add egg whites, sour cream, milk, and vanilla; mix until combined.
- In another bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to wet mixture along with green food coloring.
- Fill liners two-thirds full with batter and bake for 15 minutes or until a toothpick comes out clean.
- For the frosting: Beat butter until creamy; gradually add powdered sugar, then watermelon Kool-Aid mix and red food coloring until desired hue is achieved.
- Frost cooled cupcakes generously and sprinkle mini chocolate chips on top.
