Instructions
- Boil fresh corn in water for 5-7 minutes until tender. Allow cooling before cutting off the kernels.
- In a large mixing bowl, combine cooked corn, diced red bell pepper, green onions, and cilantro. Toss gently to mix.
- In another bowl, whisk together mayonnaise and lemon juice until smooth. Season with salt and black pepper.
- Pour the dressing over the corn mixture; stir until everything is well coated.
- Cover and chill in the refrigerator for at least one hour to meld flavors.
- Serve chilled alongside grilled meats or as a standalone dish.
