Instructions
- In a medium bowl, combine drained black beans and corn with paprika, cumin, lime juice, salt, pepper, green onions, and cilantro.
- Lay a tortilla flat and add cooked brown rice followed by the bean-corn mixture and your choice of toppings (salsa, lettuce, vegan cheese).
- Fold the sides of the tortilla over the filling and roll tightly into a burrito shape. Wrap in foil to keep warm.
