Instructions

  1. Prepare the crust by mixing flour and salt in a food processor. Add cold butter until crumbly, then gradually add ice water until dough forms. Wrap and chill for at least 30 minutes.
  2. Preheat oven to 375°F (190°C). Roll out the chilled dough into a circle and fit it into a pie plate. Bake until golden brown, about 30 minutes total.
  3. For the custard filling, whisk together milk, cream, sugar, cornstarch, and salt in a saucepan over medium heat until thickened.
  4. Temper egg yolks with hot mixture before combining back into the saucepan and cooking until thickened again.
