- 1 1/4 cups all-purpose flour

- 2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 1 tablespoon vanilla extract
- 1 cup heavy cream for whipping
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract for whipped cream
Instructions
- Prepare the crust by mixing flour and salt in a food processor. Add cold butter until crumbly, then gradually add ice water until dough forms. Wrap and chill for at least 30 minutes.
- Preheat oven to 375°F (190°C). Roll out the chilled dough into a circle and fit it into a pie plate. Bake until golden brown, about 30 minutes total.
- For the custard filling, whisk together milk, cream, sugar, cornstarch, and salt in a saucepan over medium heat until thickened.
- Temper egg yolks with hot mixture before combining back into the saucepan and cooking until thickened again.
- Pour custard into cooled crust and refrigerate for at least 4 hours or overnight.
- Just before serving, whip heavy cream with powdered sugar and vanilla until stiff peaks form. Spread over chilled custard.
