Instructions
- Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
- In a bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt.
- In another bowl, combine egg, milk, melted butter, and vanilla extract until well mixed.
- Pour wet ingredients into dry ingredients and stir gently until just combined; don’t overmix.
- Fold in the chopped apples.
- For the streusel topping, mix flour, brown sugar, and cinnamon in a small bowl and cut in cold butter until crumbly.
- Divide batter among muffin cups and sprinkle with streusel topping.
- Bake for 18–22 minutes or until a wooden skewer comes out clean.
- Cool slightly before enjoying.
