Instructions

- In another bowl, mix sugar, oil/butter, eggs, vanilla extract, lemon juice, and lemon zest until smooth.
- Combine wet and dry ingredients gently until just mixed.
- Fold in the grated zucchini until evenly distributed.
- Pour batter into the prepared pan and bake for 50-60 minutes until a toothpick comes out clean.
- Let cool for 10 minutes before transferring to a wire rack.
