Instructions
- Microwave sweet potatoes for 8-10 minutes, turning halfway through, until tender.
- Cut the potatoes in half, scoop out the flesh into a bowl, and mix with olive oil, cumin, salt, and pepper; refill skins.
- Cook ground turkey in a nonstick skillet over medium heat until browned; add garlic and spices, cooking for another minute before stirring in crushed tomatoes.
- Fill potato skins with turkey mixture, top with cheese, and broil for about 30 seconds until melted.
- Garnish with fresh parsley and serve.
