- 1 1/2 – 2 cups cherry tomatoes
- 2–3 ripe peaches
- 1 cup pitted fresh cherries
- 8 ounces burrata cheese
- 1/4 cup toasted pumpkin seeds
Instructions
- For the vinaigrette, combine olive oil, vinegar, honey, shallot, garlic, lemon zest, fresh herbs, red pepper flakes, salt, and pepper in a glass jar. Whisk until smooth.
- In a large mixing bowl, toss together halved cherry tomatoes, sliced peaches, and pitted cherries. Add one-third of the vinaigrette and gently mix.
- Allow the salad to sit at room temperature for about 15 minutes.
- Just before serving, break burrata over the salad mixture. Drizzle with remaining vinaigrette and sprinkle with toasted pumpkin seeds.
