Instructions
- For the vinaigrette: Combine olive oil, vinegar, honey, shallot, garlic, lemon zest, and herbs in a glass jar. Shake until smooth and adjust seasoning.
- In a large mixing bowl, toss cherry tomatoes, peach wedges, and cherries with one-third of the vinaigrette. Let sit at room temperature for 15 minutes.
- Break burrata into pieces over the salad mixture and drizzle with remaining vinaigrette. Top with toasted pumpkin seeds and garnish with fresh parsley.
- Serve chilled or at room temperature alongside grilled bread.
