Instructions
- Make the pie crust using your favorite recipe.
- Preheat your oven to 400°F (200°C).
- Peel and cube the peaches, then mix with lemon juice, sugar, tapioca starch, vanilla extract, and smoked paprika in a large bowl.
- Roll out one disc of dough into your pie dish and fill with the peach mixture.
- Create a lattice top with the second disc of dough and brush with an egg wash.
- Bake for 40-50 minutes until golden brown and bubbly.
- Cool for 2-3 hours before serving.
