Instructions
- Prepare the cherry filling by mixing the cherries with sugar, cornstarch, lemon juice, vanilla extract, and salt in a bowl. Allow to sit for juices to develop.
- Make the crust by combining flour, sugar, and salt; then add butter and mix until crumbly. Gradually add ice-cold water until the dough forms. Chill for 30 minutes.
- Roll out half the dough into a circle and place it in a pie dish. Pour in the cherry filling and dot with butter. Roll out the second half for the top crust or create lattice strips.
- Preheat oven to 425°F (220°C). Brush the top crust with egg wash and bake for about 65 minutes until golden brown.
