- 1 pound rotini pasta
- 1 pound lean ground beef
- 15 ounces canned black beans (drained and rinsed)
- 8 ounces canned corn (drained)
- 2 cups cherry tomatoes (halved)
- 16 ounces Catalina dressing
- 9 ounces Nacho Cheese Doritos (crushed)
- 2 cups shredded Fiesta blend cheese
- 2 cups shredded iceberg lettuce
Instructions
- Cook the rotini according to package instructions. Drain and rinse under cold water.
- In a skillet over medium heat, brown the ground beef until fully cooked and drain excess grease. Stir in taco seasoning with a bit of water and cook until thickened.
- In a large mixing bowl, combine the cooked pasta, beef, black beans, corn, tomatoes, and cheese.
- Whisk together the Catalina dressing and sour cream; pour over the salad mixture and toss gently.
- Just before serving, mix in the crushed Doritos and shredded lettuce for added crunch.
