- ½ cup cooked sweet potatoes (pureed)

- ¼ cup vegetable oil
- ½ cup butter (melted)
Instructions
- Preheat your oven to 400°F. Lightly butter an 8-inch glass baking dish.
- In a bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, mix pureed sweet potatoes, eggs, melted butter, vegetable oil, and buttermilk until smooth.
- Gradually combine the dry ingredients with the wet mixture until just blended; avoid overmixing.
- Pour batter into the prepared pan and bake for 20 minutes; cover with foil and bake for another 20 minutes until set.
- Brush with glaze made from melted butter and brown sugar before serving warm.
