Ingredients

  • 2 eggs
  • 1 cucumber, sliced
  • 1 tomato, sliced
  • Zucchini, sliced into rounds
  • 23 slices of semi-hard cheese (like cheddar or gouda)
  • 1 tbsp olive oil or butter for frying
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a non-stick frying pan over medium heat, add olive oil and sauté zucchini slices for about 2-3 minutes on each side until golden brown. Season with salt and pepper.
  2. Using the same pan, crack in the eggs and cook sunny-side-up or over-easy until whites are set but yolks remain runny. Season with salt and pepper.
  3. On a serving plate, arrange the cucumber, tomato slices, cheese, sautéed zucchini, and top with cooked eggs.
  4. Serve immediately while warm.
