- 1 ½ pounds red mini creamer potatoes
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- Parsley flakes (for garnish)
Instructions
- Preheat the oven to 385°F.
- Line a baking sheet with parchment paper.
- Wash the mini potatoes thoroughly under cold water.
- In a bowl, mix 4 cups of cold water with 2 tablespoons of lemon juice. Carve skull faces into each potato using a paring knife and place them in the lemon water to prevent browning.
- In another bowl, combine olive oil, remaining lemon juice, and all seasonings.
- Drain the carved potatoes and toss them in the seasoning mixture until well coated.
- Place the seasoned potatoes face up on the prepared baking sheet and bake for about 30 minutes or until golden brown and tender.
- Garnish with parsley flakes before serving.
