  • Total Time: 45 minutes
  • Yield: Serves approximately 6 (based on using about 9 mini potatoes) 1x

Ingredients

Scale
  • 1 ½ pounds red mini creamer potatoes
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Parsley flakes (for garnish)

Instructions

  1. Preheat the oven to 385°F.
  2. Line a baking sheet with parchment paper.
  3. Wash the mini potatoes thoroughly under cold water.
  4. In a bowl, mix 4 cups of cold water with 2 tablespoons of lemon juice. Carve skull faces into each potato using a paring knife and place them in the lemon water to prevent browning.
  5. In another bowl, combine olive oil, remaining lemon juice, and all seasonings.
  6. Drain the carved potatoes and toss them in the seasoning mixture until well coated.
  7. Place the seasoned potatoes face up on the prepared baking sheet and bake for about 30 minutes or until golden brown and tender.
  8. Garnish with parsley flakes before serving.
