- 2 cups fresh spinach (chopped)

Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine chopped spinach, crumbled feta, minced garlic, olive oil, cream cheese, lemon zest, lemon juice, dill, salt, and pepper.
- Lay the salmon fillet flat on a cutting board; slice horizontally into two even pieces if thick.
- Spread the filling evenly over one side of each piece of salmon.
- Roll each piece tightly from one end and secure with toothpicks or kitchen twine.
- Place pinwheels in a baking dish, drizzle with olive oil, season with salt and pepper, and bake for 15–18 minutes or until cooked through.
