Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray.
- Season chicken breasts with salt and pepper, then bake for 20-25 minutes until cooked through (internal temperature of 165°F).
- Allow chicken to cool slightly before shredding with two forks.
- In a mixing bowl, combine shredded chicken with buffalo sauce until well-coated.
- In serving bowls, layer cottage cheese as a base and top with the buffalo chicken mixture.
- Garnish with chopped celery, green onions, and optional toppings. Serve immediately.
