Instructions
- In a mixing bowl, whisk together olive oil, chipotle powder, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Coat the chicken breasts thoroughly with the marinade. Cover and let sit for at least 30 minutes.
- For the dipping sauce, mix mayonnaise, chopped chipotle peppers, adobo sauce, lime juice, and honey until well combined.
- Preheat your grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side until cooked through (internal temperature should reach 165°F).
- Let the chicken rest for a few minutes before slicing. Serve with the chipotle dipping sauce and garnish with fresh parsley if desired.
