Instructions
- Toast the bread until golden and crispy.
- In a mixing bowl, mash the avocado and season with salt and pepper. Spread evenly over the toast.
- Cook the eggs in a non-stick frying pan to your liking; sunny-side-up is recommended.
- Assemble by topping each slice of toast with an egg and smoked salmon. Garnish with fresh sprouts.
