  • 1 tablespoon garlic powder
  • 1 tablespoon black pepper

  • 1 tablespoon paprika
  • 1 1/2 cups finely chopped onion
  • 1 tablespoon minced fresh garlic
  • 1/2 cup apple cider vinegar
  • 1/4 cup packed brown sugar
  • 1 tablespoon minced chipotle in adobo sauce
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Prepare the spice rub by mixing kosher salt, oregano, garlic powder, black pepper, chili powder, and paprika in a bowl. Rub this mixture onto the meaty side of the ribs.
  2. In the slow cooker, add sliced onion and 1/2 cup root beer; place the seasoned ribs on top. Cover and cook on high for 3-4 hours or low for 6-7 hours.
  3. For the BBQ sauce, heat olive oil in a saucepan over medium heat; add chopped onions and garlic, cooking until soft. Pour in 1 cup of root beer and reduce by half.
  4. Stir in remaining BBQ sauce ingredients, season to taste, then simmer for 10-15 minutes before blending until smooth.
  5. Once ribs are cooked, transfer them to a baking sheet, brush with BBQ sauce, and broil for 2-3 minutes until caramelized.
