- 2 racks beef baby back ribs
- 1 large onion (sliced)
- 1/2 cup root beer (for cooking and sauce)
- 1 1/2 cups BBQ sauce
- 1 tablespoon olive oil
- 3 tablespoons coarse kosher salt
- 1 tablespoon dried oregano
- 1 tablespoon garlic powder
- 1 tablespoon black pepper
- 1 tablespoon chili powder
- 1 tablespoon paprika
- 1 1/2 cups finely chopped onion
- 1 tablespoon minced fresh garlic
- 1/2 cup apple cider vinegar
- 1/4 cup packed brown sugar
- 1 tablespoon minced chipotle in adobo sauce
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 2 tablespoons fresh parsley (for garnish)
Instructions
- Prepare the spice rub by mixing kosher salt, oregano, garlic powder, black pepper, chili powder, and paprika in a bowl. Rub this mixture onto the meaty side of the ribs.
- In the slow cooker, add sliced onion and 1/2 cup root beer; place the seasoned ribs on top. Cover and cook on high for 3-4 hours or low for 6-7 hours.
- For the BBQ sauce, heat olive oil in a saucepan over medium heat; add chopped onions and garlic, cooking until soft. Pour in 1 cup of root beer and reduce by half.
- Stir in remaining BBQ sauce ingredients, season to taste, then simmer for 10-15 minutes before blending until smooth.
- Once ribs are cooked, transfer them to a baking sheet, brush with BBQ sauce, and broil for 2-3 minutes until caramelized.
