Ingredients
- 2 medium zucchini
- 1 Tbsp olive oil
- 1/2 tsp garlic powder
- Salt and pepper (to taste)
- 2 tablespoons fresh parsley (for garnish)
Instructions
- Preheat your grill to medium heat and lightly oil the grates.
- Trim the ends off the zucchini and slice them diagonally into ½-inch thick planks.
- In a mixing bowl, toss the zucchini with olive oil, garlic powder, salt, and pepper until well coated.
- Grill the zucchini for about 5–6 minutes per side until they have nice grill marks and are tender but still crisp.
- Remove from the grill just before they reach perfect tenderness, as they will continue to cook slightly after being taken off.
