  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 1 cup chopped bell peppers (any color)
  • 1 medium onion, diced
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. 1. Sauté ground beef or turkey with diced onion in a skillet over medium heat until browned (5-7 minutes). Drain excess fat.
  2. 2. In a slow cooker, combine cooked meat mixture with black beans, diced tomatoes (with juice), chopped bell peppers, garlic powder, cumin, chili powder, and salt. Mix well.
  3. 3. Cover and cook on low for 6 hours or high for 3 hours.
  4. 4. About 30 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
