- 2 cups long-grain rice, rinsed
- 4 cups chicken broth
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup chopped fresh parsley
- 1 lemon, zested
- Salt and pepper to taste
- 1 large head of broccoli, cut into florets
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 1/4 cup grated parmesan cheese

- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat oven to 200°F.
- Set up three shallow dishes: one with seasoned flour, one with beaten eggs, and one with a mixture of Parmesan cheese and spices.
- Coat each chicken piece in flour, dip in egg, then coat in Parmesan mixture.
- Fry chicken in a skillet until golden brown; keep warm in the oven.
- In another pan, cook garlic in olive oil, add rinsed rice, then simmer with chicken broth until tender.
- Steam or sauté broccoli with garlic until crisp-tender and sprinkle with Parmesan before serving.
