- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 2 tbsp extra virgin olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp Dijon mustard
Instructions
- Mince the garlic and season the chicken breasts with salt and pepper.
- In a large skillet over medium heat, heat olive oil. Sear the seasoned chicken for 6-7 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté minced garlic for about a minute until fragrant, then add chicken broth; bring to a simmer while scraping up bits stuck to the pan.
- Reduce heat to low; stir in heavy cream and Dijon mustard. Cook for a few minutes until slightly thickened.
- Return seared chicken to skillet and let simmer together for about five minutes.
- Serve hot with a drizzle of sauce over the chicken.
