- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1/3 cup pure honey
- 1/2 cup BBQ sauce (store-bought or homemade)
- 1/4 cup brown sugar
- 2 cups cooked jasmine rice
- 1/4 cup ketchup
- 2 tbsp apple cider vinegar
Instructions
- Mince the garlic and cook the jasmine rice according to package instructions.
- In a bowl, mix honey, BBQ sauce, apple cider vinegar, ketchup, and brown sugar until well combined.
- Marinate the chicken in half of the sauce for at least 30 minutes in the fridge.
- Cook marinated chicken on a preheated grill or skillet over medium heat for 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C), basting with remaining marinade.
- Fluff cooked rice and serve topped with sliced chicken and extra marinade.
