- 1 cup cooked white rice (jasmine or basmati)
- 1 lb ground beef (or ground turkey/chicken)
- 1 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp sesame oil or olive oil
- Salt & pepper to taste
- 1 cup broccoli florets
- 1 cup zucchini, chopped
- 1 red bell pepper, sliced
- 1 yellow bell pepper, chopped
- 1 cup sliced mushrooms
Instructions
- Cook the rice according to package instructions and keep warm.
- In a skillet over medium heat, add sesame oil. Cook the ground beef until browned, then stir in soy sauce, garlic powder, salt, and pepper until combined.
- In another pan, heat olive oil over medium-high heat. Add minced garlic and all chopped vegetables; stir-fry for 5-7 minutes until tender-crisp. Toss with soy sauce.
- Serve by adding rice to a bowl, topping with the ground beef and stir-fried veggies.
