- 1 cup crumbled feta cheese
- 1 cup fresh spinach, chopped
- ½ cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- Olive oil and seasonings (salt, black pepper, garlic powder, oregano, smoked paprika)
Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly and pound chicken breasts to about ¼-inch thickness; season both sides.
- Sauté minced garlic in olive oil; add spinach until wilted. Stir in feta and sun-dried tomatoes.
- Fill each chicken breast with the mixture and roll tightly; secure with toothpicks.
- Sear chicken in an oven-safe skillet until golden brown on all sides.
- Transfer to the oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C). Rest before slicing.
