Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine shredded zucchini, salt, chopped onion, minced garlic, eggs, parmesan cheese, mozzarella cheese, cheddar cheese, and panko crumbs. Mix until well combined.
- Grease a baking dish with melted butter and transfer the mixture evenly into the dish. Top with extra parmesan cheese.
- Bake for about 25 minutes or until the top is golden brown.
- Allow to cool slightly before slicing and serving.
