Instructions
- Preheat your oven to 175°C (350°F). Grease and flour a small springform pan (20-22 cm).
- In a mixing bowl, whip the eggs and brown sugar until frothy.
- Mix in coconut oil, pumpkin puree, vanilla extract, and optional maple syrup until well combined.
- In a separate bowl, combine flour, baking powder, and pumpkin spice. Gradually mix into the wet ingredients until just combined.
- Pour batter into the prepared springform pan and bake for 25 minutes. Cover with foil and bake for an additional 20 minutes. A toothpick test should reveal a slightly moist center.
- Allow the cake to cool before glazing with a mixture of powdered sugar, milk, and maple syrup.
