- 1/2 cup butter
- 2 cups whole milk
- 4 eggs (yolks separated from whites)
- 1 1/2 cup confectioner’s sugar
- 1 cup pumpkin puree
- 1 cup all-purpose flour
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
Instructions
- Preheat the oven to 325°F (163°C) and line an 8×8 or 9×9 inch baking dish with parchment paper.
- Warm the milk until lukewarm and set aside.
- Beat egg whites with a pinch of cream of tartar until stiff peaks form.
- Melt the butter and let it cool.
- In another bowl, mix egg yolks and confectioner’s sugar until frothy. Add vanilla extract, ground cinnamon, pumpkin pie spice, and cooled butter.
- Mix in flour and pumpkin puree along with 1/4 cup of lukewarm milk.
- Gradually add remaining milk while mixing on low speed.
- Gently fold in beaten egg whites.
- Pour into the prepared baking dish and bake for 60-65 minutes until lightly golden on top.
- Allow cooling completely before refrigerating.
