- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 3/4 cup peanut butter (smooth, not natural)
- 1/2 cup unsalted butter (room temperature)
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar (packed)
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- 4 oz semi-sweet chocolate chips
- 2 oz heavy cream
- 1/3 cup water
- 3/4 cup granulated sugar
- 3/4 cup light corn syrup
- 3 large egg whites
- 1/2 tsp cream of tartar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, combine the flour, baking soda, and sea salt. Whisk them together until they are well blended.
- In another bowl, cream together the peanut butter, unsalted butter, granulated sugar, and light brown sugar until fluffy. Add in the egg and vanilla extract; mix until combined.
- Gradually add the dry mixture into the wet ingredients. Mix on low speed until just combined.
- Scoop tablespoon-sized portions of dough onto your prepared baking sheets. Bake for about 10–12 minutes or until edges are golden brown. Let them cool on a wire rack.
- In a small saucepan over low heat, combine chocolate chips and heavy cream until melted. Stir until smooth, then cool slightly before using.
- In a saucepan, combine water, granulated sugar, and corn syrup. Bring it to a boil. In another bowl, beat egg whites and cream of tartar until stiff peaks form. Gradually add hot syrup mixture while continuing to beat until fluffy. Stir in vanilla extract.
- Spread some chocolate ganache on one cookie half. Top with marshmallow fluff, then sandwich it with another cookie half.
