  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 3/4 cup peanut butter (smooth, not natural)
  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 4 oz semi-sweet chocolate chips
  • 2 oz heavy cream
  • 1/3 cup water
  • 3/4 cup granulated sugar
  • 3/4 cup light corn syrup
  • 3 large egg whites
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine the flour, baking soda, and sea salt. Whisk them together until they are well blended.
  3. In another bowl, cream together the peanut butter, unsalted butter, granulated sugar, and light brown sugar until fluffy. Add in the egg and vanilla extract; mix until combined.
  4. Gradually add the dry mixture into the wet ingredients. Mix on low speed until just combined.
  5. Scoop tablespoon-sized portions of dough onto your prepared baking sheets. Bake for about 10–12 minutes or until edges are golden brown. Let them cool on a wire rack.
  6. In a small saucepan over low heat, combine chocolate chips and heavy cream until melted. Stir until smooth, then cool slightly before using.
  7. In a saucepan, combine water, granulated sugar, and corn syrup. Bring it to a boil. In another bowl, beat egg whites and cream of tartar until stiff peaks form. Gradually add hot syrup mixture while continuing to beat until fluffy. Stir in vanilla extract.
  8. Spread some chocolate ganache on one cookie half. Top with marshmallow fluff, then sandwich it with another cookie half.
