Instructions

  1. Preheat your oven to 375°F.
  2. Wash, slice, and optionally peel the peaches. In a large bowl, combine peaches with sugar, lemon juice, cornstarch, vanilla extract, and optional cinnamon. Let sit for 10 minutes.
  3. In another bowl, mix flour, sugar for topping, baking powder, and salt. Cut in butter until crumbly. Stir in boiling water to form a thick dough.
  4. Pour peach mixture into a baking dish and spoon the topping over it in mounds.
  5. Bake for about 38 to 42 minutes until golden brown and bubbly.
  6. Allow cooling for at least 15 minutes before serving.
