Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, cream together butter and brown sugar until fluffy.
- Add egg, buttermilk, and vanilla; mix well.
- Sift together flour, cocoa powder, baking powder, and salt; combine with wet ingredients without overmixing.
- Divide batter into two bowls; color one red and the other blue with gel food coloring.
- Chill both batters for 10 minutes.
- Scoop equal portions onto a lined baking tray, flatten slightly, and bake for 8-10 minutes.
- Cool completely before preparing the filling by beating together butter, marshmallow fluff, powdered sugar, and vanilla until smooth.
- Assemble by piping filling between two cookies.
