- 1 lb ground beef (or ground turkey/chicken)
- 1 medium onion (chopped)
- 1 bell pepper (chopped)
- 3 medium potatoes (peeled and diced)
- 1 cup cheddar cheese (shredded)
- 1 cup beef broth (or chicken broth)
- Olive oil
- Seasonings: paprika, onion powder, garlic powder, salt, black pepper
Instructions
- In a large skillet over medium heat, heat olive oil and cook diced potatoes for about 8–10 minutes until softened. Remove and set aside.
- In the same skillet, add more olive oil if needed and brown ground meat with chopped onion and bell pepper until cooked through.
- Stir in seasonings and cook for an additional 3–4 minutes until vegetables soften.
- Combine cooked potatoes with the meat mixture and pour in broth. Cover and simmer for about 5 minutes.
- Sprinkle cheese on top and cover again until melted.
