Instructions
- Preheat oven to 400°F.
- Whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, Dijon mustard, salt, and pepper; set aside.
- In a separate bowl, combine halved tomatoes, mozzarella balls, chopped basil; season with salt and pepper.
- Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear on both sides until golden brown (about 1-2 minutes per side).
- Pour balsamic sauce over the chicken; bring to a simmer while scraping the pan.
- Top with tomato mixture; bake uncovered for 18-23 minutes or until chicken reaches an internal temperature of 165°F.
- Let rest for 5 minutes before serving.
