Instructions
- Prepare the Peaches: In a bowl, combine chopped peaches with 1/4 cup sugar. Let sit for at least 1 hour.
- Process the Peaches: Transfer peaches to a food processor and pulse until small pieces remain.
- Make Custard Base: Heat heavy cream, milk, 3/4 cup sugar, and salt in a saucepan until dissolved. In another bowl, whisk egg yolks until smooth. Gradually mix in warm cream mixture into egg yolks, then return to saucepan and heat until thickened slightly.
- Strain and Chill: Pour custard through a fine strainer into a bowl, stir in processed peaches and vanilla extract. Refrigerate until completely cooled (at least 4 hours).
- Churn: Pour chilled mixture into an ice cream maker and churn for about 20-25 minutes until soft serve consistency.
- Freeze: Transfer to an airtight container and freeze for at least 2 hours before serving.
