Instructions
- Combine peanut butter and maple syrup in a microwave-safe bowl. Microwave for 40-60 seconds until warm and stir until smooth.
- Gradually mix in oat flour until thick and moldable; add more maple syrup or peanut butter if necessary.
- Line a muffin pan with cupcake liners or use a silicone muffin pan for easy removal.
- Press the mixture into each muffin hole firmly to compact.
- In another bowl, melt chocolate chips and coconut oil in the microwave until smooth.
- Pour melted chocolate over each filled muffin hole and smooth it out.
- Chill in the refrigerator for 2-3 hours until set.
