- 8 oz salted butter
- 2 cups heavy cream
- 1 1/4 cups sweetener (powdered)
- 1/2 cup raw cacao butter
- 1 cup peanut butter powder
- 16 oz cream cheese
- 2 tsp Vegan Gelatin
- 3 oz cold water
- 2/3 cup peanut flour or peanut butter powder
- 1/3 cup almond flour
- 1/3 cup butter
- 1/4 cup powdered sweetener
Instructions
- In a saucepan over medium heat, combine salted butter, heavy cream, and sweetener. Cook until bubbly and thickened. Stir in cacao butter and peanut powder until smooth. Chill for at least two hours.
- Dissolve Vegan Gelatin in cold water. Whip cream cheese until fluffy; mix in dissolved gelatin followed by the chilled peanut mixture until combined.
- For the crust, mix peanut flour, almond flour, melted butter, and powdered sweetener; press into an 8-inch springform pan.
- Pour cheesecake filling over crust and chill for at least eight hours to set.
- Prepare a drizzle with melted cacao butter mixed with sweetener and heavy cream; drizzle over cheesecake before serving.
