  • 315 grams plain flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 240 ml full-fat milk
  • 2 tablespoons sour cream
  • 1 teaspoon strawberry extract
  • Pink food gel or coloring
  • 1 tablespoon cocoa powder
  • 230 grams unsalted butter (for frosting)
  • 625 grams icing sugar

Instructions

  1. Preheat oven to 180°C (350°F) and prepare three 6-inch round baking pans.
  2. In a mixing bowl, cream together unsalted butter, caster sugar, and vanilla extract until smooth.
  3. Add eggs one by one, beating well after each addition. Sift in flour, baking powder, and salt; mix in milk and sour cream until just combined.
  4. Divide batter into three bowls: color one with pink food gel for strawberry flavor; add cocoa powder to another for chocolate. Leave the third for vanilla.
  5. Pour batters into prepared pans and bake for about 30 minutes or until a skewer comes out clean. Cool on a wire rack.
  6. For frosting, beat butter until smooth; gradually mix in icing sugar and milk until creamy.
  7. Level cooled cake layers and assemble with frosting between layers; cover the entire cake with remaining frosting.
