- 1 lb boneless beef steak (sirloin or flank)
- 1 cup bell peppers (mixed colors, sliced)
- 1 medium red onion (thinly sliced)
- 1 cup corn (fresh or frozen)
- 1 can (15 oz) black beans (rinsed and drained)
- 1 ripe avocado (sliced)
- ½ cup cilantro (chopped)
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp olive oil
- 1 tsp ground cumin
Instructions
- Slice the steak into thin strips against the grain and season with salt, pepper, and cumin.
- In a large skillet over medium-high heat, heat olive oil. Add bell peppers and red onion; sauté until slightly softened (about 5 minutes).
- Push veggies aside; add seasoned steak strips to the skillet. Cook until browned (3-4 minutes per side).
- Stir in corn and black beans; cook until heated through.
- Layer the mixture into bowls: start with steak, add veggies and beans, then top with avocado slices.
- Drizzle lime juice over each bowl and sprinkle with cilantro.
