Instructions
- In a large mixing bowl, combine cooked chickpeas, grated carrots, finely chopped red onion, and minced garlic. Mix gently.
- In a separate small bowl, whisk together olive oil, lemon juice, ground cumin, ground coriander, paprika, cinnamon, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and toss until everything is evenly coated.
- Allow the salad to rest for about 15 minutes to enhance the flavors.
- Before serving, garnish with chopped fresh parsley and toss gently. Serve chilled or at room temperature.
