Instructions

  1. Prepare the bell peppers by slicing off the tops and deseeding them. Set the tops aside.
  2. Create monster eyes by placing green olives on broken toothpicks and inserting them into the tops of the bell peppers.
  3. In a mixing bowl, combine lettuce, shredded carrots, cucumber cubes, sliced radish, and broccoli florets. Toss gently with your chosen dressing.
  4. Fill each bell pepper cup evenly with the mixed salad.
  5. Use cucumber slices or mini bell pepper halves as tongues before placing the tops back on the cups.
