- 8 green olives
- 4 toothpicks (broken in half)
Instructions
- Prepare the bell peppers by slicing off the tops and deseeding them. Set the tops aside.
- Create monster eyes by placing green olives on broken toothpicks and inserting them into the tops of the bell peppers.
- In a mixing bowl, combine lettuce, shredded carrots, cucumber cubes, sliced radish, and broccoli florets. Toss gently with your chosen dressing.
- Fill each bell pepper cup evenly with the mixed salad.
- Use cucumber slices or mini bell pepper halves as tongues before placing the tops back on the cups.
- Serve immediately for an eye-catching appetizer or side dish.
