Instructions
- Preheat the oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
- In a large bowl, mix together shredded zucchini, eggs, oil, yogurt, and vanilla until well combined.
- In another bowl, whisk together flour, sugar, baking powder, salt, and spices.
- Gradually mix the dry ingredients into the wet mixture until just combined; avoid overmixing.
- Create the cinnamon swirl by combining sugar and cinnamon in a small bowl.
- Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon mixture on top. Add remaining batter and top with the rest of the cinnamon mixture; swirl gently with a knife.
- Bake for 60–65 minutes or until golden brown and a toothpick comes out clean.
- Let cool for 10–15 minutes before slicing.
