  • 1 bunch fresh cilantro (minced)
  • 1 jalapeno (diced)
  • 1/2 large red onion (diced)
  • 2/3 cup cotija cheese (crumbled)
  • 3 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 4 tablespoons fresh lime juice (approximately 2 limes)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon chili powder

Instructions

  1. Heat olive oil in a medium sauté pan over medium-high heat. Add corn and cook until slightly charred (7-10 minutes). Transfer to a large bowl.
  2. In the same bowl with corn, add diced bell pepper, jalapeno, minced cilantro, and diced onion. Mix well.
  3. In a small bowl, whisk together sour cream, mayonnaise, lime juice, cumin, paprika, salt, and chili powder until smooth.
  4. Pour dressing over the corn mixture and stir until evenly coated. Fold in half of the cotija cheese.
  5. Garnish with remaining cotija cheese and cilantro leaves before serving.
