Ingredients
- 2 boneless chicken breasts
- 1 tbsp olive oil
- Juice of lemon
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt & pepper to taste
- 1 cup cooked basmati rice
- Cucumber, sliced
- 1 cup canned chickpeas, rinsed & drained
- 1 cup Greek yogurt
- Cucumber, grated & squeezed
- 1 tbsp fresh dill, chopped
- 1 tsp lemon juice
- Optional: pinch of chili flakes
Instructions
- Marinate the chicken: Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add chicken and coat well. Let marinate for at least 10 minutes.
- Grill the chicken: Preheat grill or grill pan to medium-high heat. Cook chicken for about 5-6 minutes per side until fully cooked (165°F internal temperature). Slice.
- Prepare tzatziki: In another bowl, mix Greek yogurt, grated cucumber (squeezed dry), minced garlic, dill, lemon juice, salt, and pepper until smooth.
- Assemble bowls: Place cooked basmati rice as the base in each bowl. Layer with chickpeas, sliced cucumbers, grilled chicken strips, and tzatziki on top. Garnish with fresh dill.
