- 1 slice sourdough or whole-grain bread, toasted
- 1 ripe avocado, diced
- 2 soft-boiled eggs, halved
- 40g feta cheese, cubed
- 45 cherry tomatoes, sliced
- 34 green olives
- Fresh parsley, chopped
- Salt & freshly cracked black pepper, to taste
Instructions
- Boil the eggs for about 6-7 minutes for a soft yolk. Cool in cold water, then peel and halve.
- Toast the slice of bread until golden brown and crisp.
- Spread the diced avocado evenly over the toasted bread.
- Layer on the halved soft-boiled eggs, feta cheese cubes, sliced cherry tomatoes, and green olives.
- Season with salt and freshly cracked black pepper. Garnish with fresh parsley before serving.
