- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup plain Greek yogurt
- 1 medium cucumber (about 8 oz), grated
- 2 cloves fresh garlic, minced
- 2 tbsp fresh dill, chopped
- 2 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Mixed greens for serving (about 4 cups)
Instructions
- Preheat grill or skillet over medium-high heat. Season chicken breasts with salt and pepper.
- Cook chicken for about 6-7 minutes per side until internal temperature reaches 165°F (75°C). Let cool before slicing.
- In a bowl, mix Greek yogurt, grated cucumber (drained), minced garlic, dill, lemon juice, and olive oil until well combined. Adjust seasoning as needed.
- Slice cooled chicken into strips. In a large bowl, toss chicken with mixed greens and tzatziki sauce until coated.
- Serve immediately or refrigerate for later. Garnish with additional dill or cucumber slices if desired.
