  • 60 g caster sugar

  • 1½ teaspoons vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Peel and slice both types of apples; mix with grated lemon rind.
  3. In a saucepan, melt butter over medium heat and stir in caster sugar until dissolved.
  4. Gradually add flour while whisking to avoid lumps; slowly pour in milk and whisk until thickened.
  5. Remove from heat and whisk in egg yolks and vanilla.
  6. Layer sliced apples in a baking dish and pour the custard mixture over them.
  7. Sprinkle demerara sugar and cinnamon on top.
  8. Bake for about 20 minutes or until golden brown.
