- 375 g eating apples (e.g., russets)
- 45 g butter
- 60 g caster sugar
- Grated rind of 1 lemon
- 45 g plain flour (or cornflour)
- 500 ml whole milk
- 3 large egg yolks
- 1½ teaspoons vanilla extract
- For Toppings: 45 g butter, 45 g caster sugar, 60 g demerara sugar, ½ teaspoon ground cinnamon
Instructions
- Preheat the oven to 180°C (350°F).
- Peel and slice both types of apples; mix with grated lemon rind.
- In a saucepan, melt butter over medium heat and stir in caster sugar until dissolved.
- Gradually add flour while whisking to avoid lumps; slowly pour in milk and whisk until thickened.
- Remove from heat and whisk in egg yolks and vanilla.
- Layer sliced apples in a baking dish and pour the custard mixture over them.
- Sprinkle demerara sugar and cinnamon on top.
- Bake for about 20 minutes or until golden brown.
