Instructions
- Preheat your oven to 350°F (175°C) and grease two round cake pans.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add softened butter and sugar to the bananas; beat until creamy. Mix in eggs one at a time along with vanilla extract.
- In another bowl, whisk flour, baking powder, and walnuts. Gradually fold this mixture into the wet ingredients until just combined.
- Pour batter evenly into prepared pans and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- While cakes cool, whip heavy cream until soft peaks form; sweeten if desired.
- Layer cooled cakes with whipped cream between them and top with additional whipped cream and chopped walnuts.
